cook with ags: traditional tzatziki
Our store may have reopened (!) and we are gradually seeing life reach a little more normality here in Greece. Although we may be able to venture to work, and know that we are lucky to do so, we are still spending the bulk of our time at home, staying safe and cooking for family. We hope that wherever you are, you have access to fresh food and are finding small comforts in the ritual of preparing it.
Today’s recipe is Christina Kotsilelou’s take on the all-time Greek classic, tzatziki! As always, if you make this please continue to share on Instagram with #CookwithAGS.
Tzatziki
Serves 3-4
Ingredients:
300g Greek yoghurt (full fat is best)
1 medium cucumber, skin on
3 tbsp olive oil, plus extra for drizzling
1 tbsp white wine vinegar
1 garlic glove, mashed
1/4 fresh bunch of dill
Salt and pepper to taste
Method:
- Wash and dry the cucumber, before grating and draining through a fine meshed sieve to get rid of the excess juice.
- Finely chop the dill
- Spoon the yoghurt into a bowl, and add the grated cucumber, dill, garlic, olive oil, vinegar, salt and pepper and mix thoroughly.
- Finish with some drizzled olive oil and top with dill fronds. Enjoy!
